Fermented with wild yeast and bottled unfined and unfiltered, the Paraboll is made with our natural philosophies but offers a different personality from our vineyard site. Think dark berry, plum and chocolatey toast.
The nose begins with rose petals, strawberry and baking spices. On the palate, fresh raspberry and cranberry meld into flavors of black tea and deeper, woodsy-blackberry creating a complex, textural mouthfeel. Black cherry, sous bois and a hint of tobacco lead into the long mineral finish.
Aromas of warm cherry pie, cola, violets, and a hint of clove on the finish. Round and full on the palate with flavors of red cherries, ripe plum, and notes of cardamom with soft tannins and vibrant acidity to focus the long finish.
Red and black fruits of fresh ripe cherry, plum, wild strawberry, and fresh blackberry roll out of the glass and onto the palate. An exotic dimension is added with the tone of Chinese five spice - namely anise and nutmeg - as well as other baking spices lent by the oak, while a lingering earthy aroma provides a tip of the cap to something decidedly more old world.
