This Sparking Wine was made using the centries-old "Méthode Champenoise, secondary fermentation done in the bottle. Set in the costal foothills of Northern California resides winemaker Cesar Toxqui and family. His cellars are limited to small case production of Cabernet Sauvignon, Pinot Noir, Zinfandel and Heirloom grapes. The Toxqui family truly enjoy the art of hand crafted wine making.
