Yorkville Cellars 2016 Rose de Franc
It has been four vintages since we've made a rosé from Cab Franc grapes. We consider this our Cabernet Franc Lite, as the flavors tend to be a more subtle version of our regular Cabernet Franc. The color of a wine comes from the skins, so after 20 hours of fermentation we removed the skins to produce a wine with a very pretty salmon pink color and with lighter Cab Franc flavors.
Rosés are perfect for spring and summer, as they are served chilled and can be a refreshing accompaniment to a wide variety of warm weather fare. Rosé wines top the charts for food-friendly versatility. This wine is dry and particularly refreshing, allowing it to cross all kinds of food barriers. Some ideas: BBQ chicken, wok-charred crisp vegetables, grilled fish with chutney, summer pastas and rice dishes, or cold shrimp with sweet-spicy cocktail sauces. Serve chilled to keep zesty.
Grapes were gently crushed and the skins were left in contact with the juice for a couple hours when it was pressed to a tank. Two days later it was racked into barrels for fermentation. Fermentation continued for 32 days until dryness. We used seasoned French oak barrels for this wine. After four months in oak, the wine was racked into a tank, then gently fined, and loosely filtered before bottling. Meant to be consumed fresh - this year is best.
